 So you have some left over rice from last night? here is a perfect fried rice recipe that you can make with it.

We are making Chicken Fried Rice but the beauty of this recipe is if don't have meat just add one more egg to the recipe to make it an egg fried rice  or if you a vegan replace the meat and egg with more veggies.

Serves - 2

Spice level - Mild

Ingredients:

Items In g In Numbers
Chicken cut in small pieces 125 g  1 leg or breast
Sliced onion 150 g 1 medium sized
cabbage sliced 100 g 1 cup
Carrot  chopped 50 g 1/2 cup
Egg 2
Sliced green/sweet pepper 100g  2 cup

The one curry

masala

1 tbsp
Garlic fine chopped/grated 1/2 tbsp gms usually 3 cloves
Ginger fine chopped/grated 1/2 tbsp 1  inch cube
Oil 50 ml about 3 tbsp
Boiled Rice 250 g 1/4 cup
cashew (soaked in water) 25 gms 1/4 cup
Fresh Cilantro

Preparation :

Pre prep needs:

Rice -

Add 1/2 cup of basmati rice and 1 1/4 water and let it boil upto 90 % in a saucepan. Once boiled set it aside for it to fully cool down completely.

Chicken -

To the chopped chicken add 1 tbsp of ginger and garlic, 1/2 tbsp of the one curry masala and let it marinade for 15 mins

The FRY:

  1. Heat up a wok or pan in medium flame add oil and fry the chicken till get some charring takes about 3 - 5 minutes. Make sure the chicken is cooked before proceeding.
  2. Add the onion, peeper and carrot and fry them for 2 - 3 minutes
  3. Add 2 eggs and scramble them for a minute
  4. Add 1/2  tbsp of the The one curry masala
  5. Add all the boiled rice
  6. Add 1/2 tbsp of the one curry, black pepper, salt and soy sauce each
  7. Add 1/2 tbsp of ketchup or tomato paste for tanginess
  8. Bring the flame to high and fry them for 3 - 5 minutes without burning the rice
  9. Add a fried sunny side egg and seasoning it with THE ONE CURRY and salt
  10. And finish it off with some chopped green onions.
