Smoked Curry Chicken Salad Sandwich with Curried Mayo

Ingredients:

1 full chicken breast sliced into stir fry cuts | 200 g | |
Plain un flavored Greek yogurt | 40g | 2 tbsp |
THE ONE CURRY masala | 15g | 1 tbsp |
Onion | 70 g | usually 1/2 onion |
Celery | 40 g | 1/4 cup |
Garlic grated/blended | 15 g | 1 tbsp. |
Ginger grated/blended | 15 g | 1 tbsp. |
Raisins | 15 g | 2 tbsp |
Oil | 30 ml | 2 tbsp. |
Sliced Almonds | 30g | 2 tbsp |
Cilanto | 5g | 1/4 cup |
Salt | 15 g | 1 tbsp |
Smoke the Chicken:
- Butterfly cut the chicken breast and make stir fry cuts
- In a bowl add 2 tbsp yogurt + ginger/garlic paste + 1tsp salt + 1 tbsp of THE ONE CURRY + a squeeze of lemon
- Mix the chicken well in the marinade for 10 mins
- Heat a pan with a 2 tbsp oil and shallow fry them 5-7 mins on each side till you see some nice charring
- Transfer the smoked chicken in a bowl
Curried Mayo:
- Add 3 tbsp of your fav mayonese in a bowl
- In the same pan add 2 tbsp oil and add a 1 chopped garlic and a ginger of same size and slow fry them for a minute without buring.
- Add 1/2 tbsp of THE ONE CURRY to the oil and let it bloom for at least 1 minute.
- Now drain the infused oil to the Mayo bowl and give it a nice mix. Your curried mayo is ready
Salad:
- In a bowl add 1/2 chopped onion + Celery + Raisins + Almond + Smoked Chicken + Cilantro + 2 tbsp of the Curried Mayo and give it all a nice mix
- Your Smoked Chicken Salad is ready
Sandwich:
- Add some butter and or the left over mayo on the bread and toast it. In the video we used Jalapeno Sour bread.
- Once toasted top it off with the salad, lettuce, tomato and some cheese if you like it and Enjoy!!
