Vegan Creamy Mushroom Curry
Literally you can make this under 15 mins. And THE ONE CURRY Indian Curry Masala makes it even easier as you don't have to reach for 15 different spices for the curry.

Ingredients:

Mushroom Sliced | 1 cup |
Onion chopped | 1/2 cup |
Garlic chopped | 1 tbsp |
lime juice | 1 tbsp |
The one curry masala | 1 tbsp |
Oil | 3 tbsp |
cashew (soaked in water) | 1/4 cup |
coconut milk | 1/4 cup |
Fresh Cilantro | 3 g |

Fry Onions:
Add 2 tbsp of oil in a pan
Caramelize ½ cup of finely chopped onions and keep it aside
Cream base:
Blend ¼ cup of cashews, coconut milk & water into a fine paste
Mushroom base:
In the same pan Saute 1 cup of sliced mushrooms
Add 1 tbsp of chopped garlic
1 tbsp of THE ONE CURRY Masala blend
½ tsp salt
½ tbsp lime juice
Add the cashew coconut cream
Add all the fried onions
Add 1/2 cup water
Simmer for 10 mins
Finish with cilantro
Enjoy with Roti or rice or Naan
