Serves - 4

Spice level - medium

Ingredients:

tsp - teaspoon

tbsp - tablespoon

Note: This recipe serves 4 people and if you are making for 2 divide the ingredients by half.

Whole chicken ( We recommend legs with skin on )

1 kg 

  4 legs or one whole chicken

Onion  150 g Usually 1 medium sized
Tomato  150 g Usually 1 medium sized
Plain unflavoured greek yogurt 120 ml 1/2 cup
Lemon juice 5ml 2 tsp

THE ONE CURRY

masala

20 g 1 1/2 tbsp

Garlic

grated/blended

20 g 6 cloves

Ginger

grated/blended

 30 g 4 inches
Oil 30 ml 2 tbsp
Cilantro  10 g 1 cup
Mint
10 g
1 cup
Green chilli  5 g 2 for mild & 5 for hot
Salt 25 g  1 1/2 tbsp
Black Pepper 8g 1/2 tbsp

 

Step 1: Marinade

  • In a blender add Onion, Tomato, 1 1/2 tbsp of salt, 2 tbsp of 'THE ONE CURRY', Ginger, Garlic, Cilantro, Mint, Black Pepper, Green Chili(2 for mild 5 for hot), Lemon juice and some oil and blend it into a thick paste. 
  • Mix the above paste with 1/2 cup of yogurt and your marinade is now ready.
  • Take 1/4 cup of the marinade and keep it aside for coating.
  • Coat the mix all over the chicken and under the skin and let it sit at-least for 4-5 hours(but if you are in a hurry 2 hours should still give you good results). Overnight in the Fridge is even great.

Step 2: Show Time

In Conventional Oven:

Heat up the grill or oven at 380 F and cook 30 mins on one side and 30 mins on the other side accordingly constantly applying oil and some left over marinade sauce every 15 mins. And then with the skin side up broil it on low heat for 3-5 minutes to get some nice charring.

In BBQ Grill:

Heat up the grill to 400F and cook 20 mins on one side and 20 mins on the other till you see nice charring on the skin constantly rubbing some oil and the left over sauce.

Add a squeeze of lemon and enjoy!!
